Balmier days and lighter evenings call for a switch-up of your go-to dishes. Our repertoire of comforting gravy-fillled pies and oodles of root veg mash and wintery veg is due to look a bit more colourful and we can’t wait! From vibrant salads to light and refreshing veg dishes, there's no shortage of delicious options to explore and enjoy. So gather your ingredients, pop your pie or pasty in the oven and get ready to savour the flavours of spring with these delightful side dishes!
Here’s a rundown of the veg that’s currently in season and a few springtime recipes that showcase the best of the season's bounty and elevate your Pieday night dinner.

Super Simple Spring Greens
You can’t go wrong with some spring greens sautéed with a large knob of butter and some minced garlic. Sprinkle with some pine nuts for a lovely crunch and voilà! These work well with creamy Chicken, Leek and Bacon Pie or a vegan Mushroom Stroganott Pie.
 
Steak & Ale pie
Beautiful Braised Cabbage
Our friend James Strawbridge made this recipe to go with our Steak and Ale Pies. We were so inspired that we had to share it again! Cut pointed cabbage into segments, then fry with shallots in a large knob of butter, add some veg stock and simmer for a few minutes. Add some horseradish and mustard, nutmeg, salt and pepper and you have a super side to perfectly compliment your Steak & Ale Pie dinner!

Broad Bean Bonanza
If you’re in the mood for a pasty luncheon in the sun, then you could whip up a broad bean salad to accompany it. Try combining boiled broad beans with feta, pine nuts, watercress (another in-season veg) and drizzling with oil and lemon juice. Refreshing and scrumptious – especially good with a Steak Pasty or a Cheddar and Onion Pasty! Broad beans also work beautifully with mint and spring onions to compliment an Ultimate Steak pie.
